Using fish and shellfish from sustainable sources is not only important for the environment; it is good for the purse. With seafood prices rising and quantities dwindling due to over fishing, we need to be looking at lesser-known sustainable options for the table. You’ll learn firsthand how to select, handle, store and prepare a variety of seafood, including techniques for pan-searing, making fish stock and creating a seafood-based pan sauce. We’ll enjoy our seafood buffet paired with wine from Liberty.
