Vegetarian Pasta, Gnocchi and Contorni with Ursula Ferrigno

Ursula Ferrigno is a talented cook with a deep love of Southern Italian food. Half Italian and a noted teacher Ursula specialises in demonstrating the making of Italian bread, Italian soups, risottos, vegetables, fruit dishes, and every kind of pasta dish. She has cooked on many TV programs and is a prolific author.  Her books include Trattoria,  La Dolce Vita – a book of heavenly desserts and sweets and Ursula Ferrigno’s Italian Cookery Course.

Vegetables have a course entirely separate in Italy; that’s how important they are, it’s called Contorni.

You will learn how to make beautiful hand rolled pasta Rotolato filled with spinach, tomato & ricotta

Nettle Gnocchi with Asparagus Sauce

Aubergine Polpetto, Aubergine ‘meat’ balls (but not meat!)

Focaccia di Verdure Grigliate, delicious grilled vegetable focaccia

Insalata di Sicilia, tomato, mint and red onion salad

Peperonata all Campagnola, country-style peppers

Golden Polenta Cake with Strawberries ‘Pazzo’ (strawberries in aged balsamic with black pepper – crazy, but delicious)

And more! Ursula will most likely demo additional dishes and keep everyone entertained with wonderful stories of her family, travels and cooking!

This hands-on workshop will include a lunch of your own making with refreshments served throughout the day including Italian wine!
