The Moorish Spice Trail with Marcia Barrington

Marcia Barrington is a chef and recipe writer with a long-standing career in food. She was one of the original directors of the Divertimenti Cookery School, has held consultancy posts at top event companies, headed up a French cookery school brand for its UK launch and latterly – as catering boss, where she set up and ran her high-end catering company for ten years. She now splits her time between teaching in London and Valencia, Spain where she runs her food tour in and around the renowned Mercat Central.
Marcia will be back at The Mistley Kitchen to teach a masterclass using aromatic flavour and spices from the Moorish Kitchen.
So, expect to cook through a menu of Flat breads with olive oil and Za’atar
Griddled bread salad with padrón, sweet peppers and olives, Spiced quail with pomegranate salsa
Saffron rice with cinnamon fried onions, almonds & parsley
Braised fennel with lemonand to finish – Little orange and almond cakes with dark chocolate glaze
On arrival you will have tea and coffee and light refreshments, they will also be available throughout your day and wine will be served with your meal.
